I got Green Crack seeds and grapefruit seeds, both Sativa dominent. I don't want the plants to get too big can I start flowering after two weeks of growth and will it make the plants smaller in the end?

The vegetation cycle of a plant ultimately will affect how much of a yield you will get at harvest. As such, let the plants vegetate as much as possible until they start to make it difficult for light to reach the lower buds.

I am not sure how tall your plants are, so it's difficult to say whether or not your plants are ready to begin flowering, but if you're concerned with them becoming too big/stinky, then you probably should stop them now.

Im not concerned with yeild just want some personal....I heard somewhere that you have to wait for the plant to sexually mature and pre-flower b4 u can induce 12/12, but then Ive heard people say they veg for 2 or 3 weeks and it works being that most strains double sometimes triple in growth in the flowering stage i want to flower as soon as possible.

As soon as you see pistils growing, you can technically start 12/12.

I know people who veg. their OG's for 1-2 days then BAM, right into flowering.

I also know people that veg. for weeks/months.

Depends on your preference and a bit on teh strain.

Its not the thickness depends on the planting, the soil and the other resources, initial growth gives the length of the plant the distance between the nods should be minimum for a short plant. read in the web for the procedures, given detailed.
